Recently I learned how easy this is by making half a gallon.
One of the pint jars is flavored with lime and ginger. Upon tasting I realized it really does need something sweet so I added honey.
The overnight process changes the proteins in milk making its nutrients available to people with lactose intolerance. So I understand from the internet.
And it doesn't have to be cow's milk either. Almond milk works and so does coconut milk. So I understand from the internet.
Plus it's fun. Plus you control the flavorings. Plus you control the probiotics that turn the milk. Plus you can make great quantities for much less cost.
