corn pancake with apricot topping




Steps not shown. The usual thing with wet and dry ingredients. Milk is added to the egg with melted butter. 

Dry ingredients are 1/8 cup popcorn kernels processed to powder in coffee bean mill, the rest all purpose flour, sugar, salt, baking powder.

This time the corn was pre-cooked in the microwave with its portion of water. Cooked to slurry.


Heat is low. A lid that does not fit covers the pan. Scant water is drizzled in to create steam. The pancake is cooked through and firm before being flipped. That ensures none of the bubbles collapse when it is flipped.
