Lamb dip and handmade tortilla chips




The idea is to use sour cream for something and today lamb is it. A disc is cut from a lamb roast and cubed.

Bacon is started in an oversized pot. Spices are added to the rendered bacon fat before the bacon particles crisp. 

A lot of spices. Enough spice to season the lamb and an equal amount of cooked beans. Enough seasoning that sour  cream will not mute the flavor. Exotic spices. Unusual spices that you might not expect will go together or go with lamb. Experimental spice combinations for fun. 

I am really digging clove right now and fennel too. That is a very odd combination but if you were around when the spice hit the oil you would suddenly smell method in madness.

And if you had my tongue then when you tasted it you would say, "that is okay but it could use some chile flakes.

Tortilla chips made the usual way with regular masa harina and water, pressed, fried briefly to strengthen for the oil, then shallow fried. There are 8 tortilla discs so 48 triangle chips. About 30 were consumed for dinner, maybe less. So all that for just that.
