Cornbread with bacon, cheese, jalapeño






Jiffy mix. 

Usually I'll mill my own popcorn into corn meal powder but this time I used one of the two boxes of Jiffy mix that a church brought over last thanksgiving. Jiffy does their best at keeping their powders fresh but nothing can beat freshly milled. You can tell right off by the scent that is released when you mill it. 

And you realize the thing that you're smelling is escaped flavor, and that flavor will keep right on escaping over time. The longer that air touches the particles then the more that the powder oxides just like juicing vegetables and fruit. Everything is best eaten fresh. And here fresh means both the freshest plant possible and freshly cut or juiced or milled. Soon as the cells are crushed or cut or broken open then the oxidation begins. Very much like rust.  So then consume it immediately as it looses flavor and nutrients denature. 

This is demonstrated by blending vegetables vs juicing vegetables. Blending creates a vortex that violently mixes air into the liquid. Juicing does not. They're both oxidizing but the blender is going much faster. Right before your eyes the blended mixture darkens as a potato left out in the air. YouTube has videos of this: blender vs juicer.
