Chocolate snack pound cake





These are intended to have with a drink.

Regular cake mix is too tender and delicate for snack with a drink so heavier denser pound cake is made instead. 

No baking powder, egg is the only leaven. And no vegetable oil to make moist and tender. 

These do have instant expresso to round out the chocolate and vanilla extract with scant almond extract. 

In French the same thing is called quatre-quarts, four quarters, and in Mexico the same thing is called panqué. The basic recipe is by weight 1 part butter, 1 part sugar, 1 part egg, 1 part milk, with a broad range of modernized variations for different effects including baking powder, sour cream, vegetable oil, beaten egg whites, castor sugar, nuts, raisins, fruit and the like.
