pot-roast, pressure pot






1 hour + 20 minutes in the pressure cooker. That's like 4 hours in a regular pot. Maybe a bit too long. And maybe perfect.

Then the vegetables cooked separately, the cooked meat removed from the pot, the vegetable in the same 1 + 1/2 cup water, now flavored with beef, for 11 minutes. That's like 33 minutes in a regular pot.

Only salt and pepper. No bay leaf, no dry herbs, no flavor enhancements at all. None of the usual messing around. Just olive oil to sear the meat. 

I forgot how delicious this is. The simplest thing is truly extraordinary.
