The shrimp is brined for 10 minutes while the shells are boiled. The thawed shrimp are cut across the bottom several times to snip the tendon inside that causes them to curl, then set upright and pressed to assure the connections inside are broken. Then poached in the flavored water off the heat until they change color and denature to their centers.

The dough is one egg a tablespoon of olive oil and a few tablespoons of flour.

Salted starchy pasta-water is reserved for the sauce. 

* A few tablespoons of olive oil
* A few tablespoons of butter
* half a cup or so of pasta water
* salt/pepper
* lemon juice

* Peas
* Basil
* Tomato
