Biscuit, chicken gravy, poached egg




Regrettable you might say deplorable leftovers. I will go to some length to fake myself out into thinking I am not eating something horrible. It never works. 

The found odd package felt heavy in a crisper where things should be light. Turns out to contain partially mummified chicken parts. 



I decided to eat them. 


The chicken bits will take a regular béchamel with nutmeg, shifted to a velouté with the addition of commercial chicken stock. 

The liquids; chicken stock, and milk were started with a fortified white wine, so three liquids. 

But the sauce was not started until the biscuits were in the oven. Then water for a poached egg was started and an egg cracked open into a ramekin. The sauce was made at the same time the egg poached and the biscuits baked they all ended at precisely the same time with a little room to fudge with the egg sitting in water that became too cool to actually cook it any further without a lot of time which it didn't have.

This is one cup of flour with butter and lard rubbed into it. It produced three biscuits. That tells you it is possible to do this for one biscuit with only 1/3 cup flour. 


Buttermilk therefore baking soda to react. But I want more reaction than that so I will add baking powder which has both baking soda and an acid or two, to keep the whole thing in pH balance for a double whammy reaction.
