Cheddar cheese crackers







These are  easier to make than they are to describe and I'm over it. However there are a few differences about this batch specifically probably worth noting and it might be good to share a few bits of wisdom that could alter positively your cracker-making lives. Easily summarized

* very wet dough
* rolled very thinly
* 1/2 Egyptian kemet whole wheat milled at home 1/2 high protein bread flour
* low heat to dehydrate 350
* which took longer to bake. Set timer to 9 minutes. Added 4 minutes.
* baking powder to lighten. A lot. three teaspoons total, but added in two  increments to allow time to roll out the dough without activating the powder. Clever, eh? 

So you see I started out with 8 oz cheese. The idea is to imagine the cheese as a block of dots. The dots are spread out flatly so now they cover an entire table. The table can be divided into four to six baking pans. 

Stay with me, you're still imagining. The table of cheese dots is evenly spread. The spaces between the dots are filled completely with a single layer of flour so now there is a solid surface of cheese dots filled in with flour. That is sprayed with water which turns the flour into paste. There are your crackers. 

Now is that wisdom or what? Now you can make any kind of cracker in the universe. You can write a book about making crackers. It doesn't have to be cheese and it doesn't have to be flour, although flour makes a very good glue. Gluten. Glue.
