tempura green beans



The beans are blanched first in salted water. The whole thing poured through a strainer.

A bowl of half flour and half corn starch is mixed with salt, cayenne and scant sugar. The beans are tossed into the flour and shaken through the same strainer, a savings of one strainer, to remove excess. This dusting on damp beans helps the batter adhere.

An egg is beaten  with this carbonated lemon lime flavored water to make a thin batter. Cooked in shallow oil at moderate heat. It goes very fast.

One time a friend said, "Oh man, this is great. Can I take some home for later." 

"No! It's one of those things that's immediate."
