N.Y. steak, sweet potato


The oven is already on from baking the sweet potato. It's turned down to low.


The pan is searing hot. It smokes. 

The steak is cooked as if branding a steer. Brutally. No fat added. The steak has fat. It might stick to the pan. It's own fat will release it.  


Into the oven to calm down. Mere minutes. Too long and the steaks are cooked through.
