puff pastry, blueberry and apple turnover








This bit four times. Maybe five. It could have been six. I doubt it was seven, but a lot of back and forth between the refrigerator and the work surface, messing around for a very long time.




The filling is a basket of blueberries. 

Turns out, they taste dreadful. 

Altered with brown sugar, white sugar, salt, cinnamon, clove to fix them. Lime juice added. 

I realized there isn't enough so an apple is diced and added and that fairly doubled the bulk. The combination is very good. The blueberry flavor comes through nicely boosted with apple and sugar. Also vermouth. And butter. 

Lots of butter in this dough. Too much. More than shown here. Another layer was added an it turns out that is probably too much. 

There is most likely a proper scientific formula for these things but who ever obeys those?
