tuna and apple, nori and rice



It is a tiny ugly apple the kind that comes in a bag. Too unsightly to put with other attractive apples in the bin. And it is the best apple I've tasted since childhood.

When apples were really great. Grown for their flavor and not for their looks.



This is for crunch like jícama or cucumber but it also adds sweetness and flavor. It goes with the tuna very well.


Sushi chefs cool and dry their rice in a wooden box and spread it around with a wooden spatula while fanning and drizzling with sugar cooked in vinegar, equal part. But this is not sushi rice. It's just cooling this way.
