Carrot cake

I thought this was one pound but it is two pounds and that means I only need to grate half of this bag.

These steel pans are at least twice the weight that you might imagine cake pans would be. I have two other pans by this company for Pullman loaves and those work very well. American-made. These pans work very well with the parchment inserts made for their size. These are 8" pans, smaller than usual. And that fits the cake stand dome perfectly. That was a guess. 

This seems like too much. And it is. Leftover frosting was frozen.
