Breakfast burrito


There is the softness and mildness of avocado and egg then a deep roasted flavor that is not apparent from these ingredients.

Where did that come from?

Oh, the Hatch roasted peppers included in the chile, and there are only two tablespoons of that.



This leftover center cut loin chop is too tough for breakfast burrito so it is sliced and boiled with scant baking soda to soften it. It will be added to the roasted poblano chili and a small portion of that used for this burrito.



Very soft. Barely holding together.




Where's the egg?



Mission tortillas. The package says "burrito size." Pfft. Please. These are slightly larger than regular tortillas but honest burrito tortillas are a LOT bigger than these. I started to think, "Oh man, how am I gonna do this?"

It will just have to be smaller than usual.


Well, here is breakfast right here. Eat it! Look at it first! The thing is pure art.
