Shrimp and hominy



One fourth cup of treated corn kernels.


The packages tacked up together to concentrate things used in Mexican cooking labeled as posole, I think. We know it as hominy.  Corn processed with lye. Nixtamalization. See tamale in there? 





Lye-treated corn kernel powder, one cup water, basil, butter, cheese, shallot, roasted poblano, shrimp.  


      What happened?

The rest is in the microwave for four minutes. Removed in thirty second intervals to stir as the powder absorbs the water. The mixture must come to a boil, then boil for at least thirty seconds.


Heat from the cooked hominy will cook the shrimp and melt the cheese.
