Egg and ground beef tostadas with jalapeño, shallot and cheese

American cheese, how bizarre.





Other people's tostadas are more beautiful than mine. Theirs are automatically more appealing by their fresh vegetables; avocado, lettuce and tomato splashed with salsa. So refreshing. So colorful. Delightful.

Today I have all those things but I do not want to use them on these tostadas. No sauce either. My brain kept nagging me keep these dry as possible. 

Desperately dry.

While hydration is simple water.

Lots of simple clear cold water.
